In response, Tasmania launched FermenTasmania, a community bioprocessing hub created in part to repurpose surplus fruit, particularly polyphenol-rich varieties like apples, grapes and cherries, into next-generation health ingredients. Clever was a study participant, invited to contribute its fermentation technology to help bring this vision to life.
